【DEFINITION OF ENZYME ACTITIY】
Unit definition: One unit will hydrolyze 1.0 micro moles of N-alpha-benzoyl-L-arginine ethyl ester (BAEE) per minute at pH6.0 at 30 oC.
This product was produced by Saccharomyces cerevisiae strain, which fermented in submerged medium.
Papain, also known as papaya proteinase, is a cysteine protease (EC 188.8.131.52) enzyme present in papaya (Carica papaya) and mountain papaya (Vasconcellea cundinamarcensis). Papain is usually produced as a crude, dried material by collecting the latex from the fruit of papaya tree. A purification step is used to remove contaminating substances through a government-registered process, and than ultra purification and concentrated by refined spray.
Our ultra refined papain powder was produced by tapping the latex from the fruit of Carica papaya. The latex under goes various steps of filtration, micro filtration, ultrafiltration and polishing filtration. It is finally spray dried into a free flowing white color powder. Our papain enzyme is mainly used for the baking, brewery, and protein hydrolysis. etc.
