This product was produced by Saccharomyces cerevisiae strain, which fermented in submerged medium.
 
【INTRODUCTION】
Invertase, named as sucrase, fructofuranosidefructohydrolase (EC.3.2.1.26), could specifically hydrolyzethe fructofuranoside band of the non-reducing sugar. It could hydrolyze the sucrose into glucose and fructose to prepare the glu/fru syrup.
Invertase could be used as the additives, ingredients, and the biocatalyzer in the fields of food, beverage, alcohol fermentation, and pharmaceuticalpreparation. Etc.

【ENZYME ACTIVITY】

【DEFINITION OF ENZYME ACTITIY】
The DNS method was used to determine the enzyme activity in theproduct, and sucrose was used as the substrate. Enzyme Unit defined(U/SU): One unit(U) was defined as the amount of enzyme need to released one micro mole reduced sugar from the sucrose in one minute; One SU was defined as the amount of invertase to release 1 mg of invert sugar in the reaction mixture with 5.4% sucrose 6 mL, 50 oC, pH 5.0 in 5 min.
